A super easy and quick throw-together side dish; especially if you already have cooked bacon on-hand.
Large head cabbage (chopped into large pieces)
1 onion (chopped)
2 cups water
2 cups chicken stock
2 tbs butter
About 5-6 pieces cooked bacon (chopped or crumbled)
1/4 teas dried tarragon
Salt and pepper to taste
The great thing about this is that you throw it all in the pot together and cook until tender. That’s it.
I strain it before serving if it’s meant to go with dinner, but the hubby loves the broth too and always makes a soup out of it. To make soup, add more of the liquid parts and add potatoes, carrots and a heartier meat like leftover ham. Yummy!
Tip: always make sure the bacon is fully cooked. If all you have is raw bacon you should take the time to cook it first; don’t be tempted to boil it with the cabbage. (It turns out chewy and adds a lot of fat to your dish.)
